MY FIRST THANKSGIVING!?
Hello, I’m 22 years old and my best friend and I are officially out of our parent’s homes and would love to put together an amazing first thanksgiving in my new home. I would love for some out of this world AMAZING traditional and non-traditional recipes! Nothing TOO TOO basic and nothing extremelyyyyyyyyyyyy over the top! I would love all the help I could get! Ideas for cocktails would also be lovely! (We will have anywhere from 8-10 guests).
FYI: I COOK AND ENTERTAIN 2 TIMES A WEEK. JUST NEVER DID IT ON THANKSGIVING.
Wow – that is a lot to handle!! First things first, remember that you dont want to be super stressed out, have meals you cannot handle, or be so overwhelmed that you dont have a good time.
First, a turkey – remember to take the bag out of the turkey – I know it sounds stupid but remember. Remember to defrost it – it takes forever. I stuff mine with slices of lemons, limes, oranges, whatever acidic fruit I have around. Throw in some normal spices such as thyme, rosemary, slat and pepper. Melt a stick of butter and add a cup of lukewarm stock. Tie the birds legs together and put on a baking rack. I cook mine breast up, but take what others say into consideration.l
I cook mine at 325 for, basically, the whole day, starting at 8am till about 3pm. Before you stick it in, brush on some of the butter/stock mixture, season with salt and pepper, some herbs if you like it herby. Baste it with the butter/stock mixture whenever you can. Cover it for the first few hours with tinfoil so that it can control how brown it gets. Follow the hours recommended for the weight of the bird.
Boil in a bag veggies are an easy option and they cook on top of the stove – creating room in the oven that is needed. We do corn and peas. I like mashed potatoes – you can also cook them the day before and rehaeat on top of the stove. My mother use to do this “restuffed potatoes” thing – basically bake the potatoes, cut the tops off, empty the skins leaving the bottom, larger part whole, make mashed potatoes, restuff the mashed potatoes back in, top with two dollops of butter. She then cooks these in the oven after the bird is out.
Green bean cassarole is another good one, find the recipie on teh back of the container. It takes some cream of mushroom/celery/chicken – whatever you have – and some canned, fried onions. Very easy and the guys seem to love it.
I make a sausage and sage stuffing. I take a roll of sausage, cook it up, saute soem onions and celery in the same pan to gather the sausage bits left over. Then I tak fresh sage, mince it, and add it in. You can use dried if it is easier. Then I add the stuffing bag to it, adding stock until desired consistencey. At the end, I add chopped walnuts. I cook them like muffins in tins so that the edges get crunchy and crisp.
As a cocktail, for a large group, add a bottle of ginger ale, a bottle of cranberry juice, vodka to taste, and garnish with fruit, such as fresh cranberries, rasberries, or pomengrants.
