intellectual property or not?

I wrote a new cocktail list for a new job and I want to know if I have the right to take it when I leave, or ask for payment if they want to keep it.

The menu is printed into the normal food menu, and the text consists of small paragraphs to describe the drinks, as well as whats in them. It’s done rather poetically as opposed to just listing the ingredients.

I am not under any formal signed contract regarding this, and I also wrote the menu at home (not at work and I wasn’t paid for it)
The recipes are my own (not just copied off the internet, although some are rather standard types) I am more interested in the actual words describing the cocktails, rather than the actual recipes.

Am I entitled to take all copies (as well as the instructions/recipes kept behind the bar) with me when I leave, or ask for renumeration for this menu?

*note, I am not asking just about the recipes, more so about the context/words/writing ABOUT the drinks

Absolutely, if it wasn’t done on company time, you own the copyrights to the text. If you do decide to allow them to keep the text for a fee, make sure you license it to them rather than sell it to them. That way you’ll be able to license it to other establishments.
