“A dash of grapefruit bitters”?
Hi!
I’ve found a cocktail recipe where they use “a dash of grapefruit bitters”. I don’t live in an english-speaking country and can’t find if this is a registered trademark (like Chartreuse), a type of drink sold by different brands or just some grapefruit juice.
Two other things, while I’m at it:
What is a dash? Is it a drop or a bit more than a drop but still not a lot?
And the last one: “garnish with a grapefruit zest sprayed around the glass and then discard”
I don’t understand: I thought it meant I’m supposed to decorate (garnish) with a piece of the rind (zest); but then I’m supposed to spray it (press for the liquid to drop inside the glass) and then throw away… I’m not sure what they mean.

There are a few different types of bitters, but some are very hard to find. Bitters is a variety of fruits, herbs, and roots that is steeped in alcohol. There’s agnostura (very popular), pink bitters, blood orange bitters, and grapefruit (I’ve never seen any in person). If you can’t find what you’re looking for in stores, Amazon carries some that seem to have good reviews.
Most bottles of bitters have a plastic or rubber top with a small hole. A dash is what comes out with a single strong shake, and varies by brand, but is usually 3-5 drops worth.
I’m a little confused by their wording about the zest too but I’d say you have it right: twist the rind to release the oils in the glass, then discard.
